What are 'Teams'

Teams is a feature which allows you to control who can edit content at a granular level. In some cases you might want to control specifically who can create or publish content in a certain category, while restricting them from doing so in all other categories. 

With teams, you can create a new team and assign specific additional permissions to write or publish to a certain category, and add teammates to that team.

Any teammates that are added to the team will gain the additional permissions for the corresponding categories, even if in general they only have read only access.

This means you could have a teammate whose main role is "Contributor" which allows only reading and writing content, but set them up to also have publish access in a category where they are the domain expert.
